I just heard it again and in my case, I'm clearly hearing the word ending with a "ma" or "mo".
I know that "Penitenziagite" isn't a latin word, but it's taken from 2 latin words: "Penitentiam Agite". Here's a quote from "How-to-learn-any-language.com" forum :

Oh wow! Thanks a lot for the reference! Yeah, I knew it was about the book "The name of the Rose" since it was amongst the results of the "Penitenziagite" research on Google, but I didn't know it was a rallying cry. Everything makes sense now!

It's been years I've tried to figure out the chants meaning! This thread is the most complete I've found! The Chicken spells was enlightning, for example!
I think the creators of this game made everything with a sense!
Just let me ask, who doesn't love the dragons in Dungeon Keeper? They're awesome, both in style and attitude.
