Mmkay, time to bring back some suggestions. This one's one of my favorites.
Name: Hydra
Stats:
Health: High
Attack: Medium, but each head attacks, so it adds up
Defense: Medium
Armour: High
Accuracy:Average
Speed:Slooow on land, fast in water
Dexterity:High
Intelligence:Low
Wage:Ridiculous
Skills:
1 Melee
for each level, gets new melee attack. Either new attack or just make cooldown time multiplied by a factor of 1/n each level, n being the new level
Information: Probably a boss creature of some kind. Starts with a certain number of heads, must be all chopped off before creature dies. It grows one new head per level (might be hard on animation, so maybe 1 head every 2 levels)
Behavior in Dungeon: I don't think this should be keeper-owned. It should be guarding some precious item or secret entrance or, even better, guarding a secret passage way to the hero's main chamber.
Also would be found in water
Jobs: None, to animal-like
Behavior in OverWorld: Won't venture to overworld much, just sticks around water in dungeons or the deep
Obtainable By: Neutral hostile, not attainable
Style: Fighter, since it's quick i'd say flanker
Hang Out Group: Perhaps tentacles could be swimming around it
Hates: Anything that disturbes it
Loves: Water
Lair: Could just recover in water
Appearance:
How Introduced: hostile definitely

Maybe extra heads would be an ability instead? It would give it two extra heads and thus attack 3 times more often while ability last? Just an idea. It would be a little bit more easy to manage.
Edit - Also, I'd say blitzer or blocker over flanker. It may be fast but it also very big and I can't see it as a flanker.

This would be even harder to manage. Different graphics storage and different pathes, that somehow should be related to an exact creature.

Yeah I think we should have bosses to guard specails, trophy specails, gems etc. and this would be a good one but...
It does need a bit of extra work done on it.
I love the idea of a Hydra.
Hydras can have any number of heads, Hercules was supposed to have defeated a 9 headed one.. (just a small history lesson)
I know that in other game engines it is possible to hide bones (of the mesh) thus hiding the geometry weighted to those bones. Thats how most head shots are simulated. I'm not sure if the hiding is done by changing the drawscale of the bones to 0 or some other dark magic. So it is possible to chop of heads or make them appear to grow (how good the appearing to grow effect would actually look is another thing!)
