Peasants are the hardworking, but content and overly happy residents of the realms you seek to take. Instead of running around, cowering in fear or whatever else citizens do when attacked by hellish hordes of evil beasties, peasants will take up arms to fight for their lord. A noble gesture perhaps, but such is their fighting prowess that they only ever get themselves killed.
Although they appear underground on occasions, Peasants are most common on the surface where they will form large groups in attempts to overwhelm unwary Keepers.
